Chop the onion into julien strips, and caramelized them for about 10 to 15 minutes, making sure to add just a bit of water if you notice them getting too dry. stir constantly for a jamy consistency. After they reach desired jamyness, set aside.

Now, cut the carrots with the skin on, into french fry shapes and mix in a bowl with one tbs of mustard, garlic powder, salt, pepper and half a tea spoon of smoked paprika, then set in a tray with parchment paper making sure that each fry is separated from one another, and set in the oven preheated at 200° C for about 15 minutes.

while the carrots are baking, cut your buns In half, and butter them on the soft side, then toast them for 2 to 3 minutes in a hot pan, until golden brown and toasted on the edges.

Set buns aside, and spread ketchup on the top bun, and mustard on the bottom one. Now slice your tomatoes, and keep the slices handy and ready for assembly.

Now, split your ground beef into 4 equally sized and shaped balls, make sure not to pack them too tightly. Just gently roll them in your hands into ball shapes.

Get a pan nice and hot, make sure that it's cast iron or something non stick, add a bit of olive oil, just enough to coat the pan, and place your beef balls pretty far away from one another so you can have room to smash them.

Once the balls are placed in the pan, use a spatula without holes, or just the bottom of a smaller pan and smash down on the patties until flat and thin, and hold them down for about 10 seconds each.

Now, they are going to cook until a beautiful brown crust is formed underneath the party.

They way you can tell that it's time to flip is by checking to see if the juices are rising on the party, and also if the sides are brown.

Once you've noticed that it's cooked, hit the patties with salt and pepper, and flip them over.

Now optionally, you can add a slice of American cheese on 2 of the patties, and let them melt on top.

Once cheese is melted, take the patty that does not have cheese and place it on top of the one with cheese on it.

turn off the heat!

Now it's time for assembly:

First, patty on the bottom bun.
Tomato on top of the patty
Lettuce on top of tomato
caramelized onions on the top bun
Place top bun, and press down gently.

Et. Voila!! Enjoy!
